Whole corn contains several essential vitamins and minerals. It is also a good source of dietary fiber, supporting healthy digestion.

Cooking Methods

Preparing corn will take some preparation. There are methods to cook it in the husk and without. Some common ways of cooking corn include:

Boiling: Fill a large pot ¾ full with water and bring to a boil. Shuck as many ears of corn as you would like, and place them in the pot. Bring the pot back to a boil, then turn the heat off. Leave the corn covered in the pot for 5-10 minutes, or until tender.

Grilling: Preheat the grill for a few minutes. Take off one layer of the husk of each corn cob. Place the corn in the husk on the grill, cooking for five minutes on each side. After cooking, remove the corn from the grill, and place on a plate for
five minutes to cool before removing the husk.

Roasting: Preheat your oven to 350°F. Place corn cobs in husks directly onto the rack and bake for 30 minutes. When removing the corn from the oven, be sure to use oven mitts.

Seasonings

Try one of these seasoning ideas, or mix & match and come up with something new!

  • Old Bay seasoning
  • Brush with pesto and add parmesan cheese
  • Chili powder, garlic powder, and lime juice

Storage & Preservation

To store fresh corn on the cob, leave it in the husks. Refrigerate it in a bag or container with as much of the air removed as possible. Use within 5 days.

To store cooked corn on the cob, store the ears or shucked corn in an airtight container in the fridge for 2-3 days maximum.

To freeze corn on the cob, first remove the husks. Husks will be hard to peel off frozen corn if they are not removed first. Raw corn on the cob must be blanched. To blanch corn, bring a pot of water to a boil and fill a bowl with ice water. Boil the ears of corn for 7-11 minutes depending on the size of the ear. Then transfer them to the ice water and allow them to cool completely. Drain them and transfer them to a bag or container. Properly blanched and packaged, they can be stored in the freezer for up to a year.
