Celery is a great source of many essential vitamins and minerals. It also has lots of dietary fiber to support healthy digestion. Celery is a great vegetable that has minimal impact on blood sugar levels, as well.

Cooking Methods

Celery can be enjoyed cooked or raw. It is always a good idea to wash your celery just before using it. To cut celery, simply cut away the end where the root/stem are and cut the tops of the stalks off, along with the leaves. Enjoy the full stalk of celery, or cut it into slices to enjoy in your favorite dish! Some common methods used to cook celery include:

Boiling: To boil celery, fill a pot with water and bring to a rolling boil. Chop the celery, and carefully add it to the pot.
Boil for 10-15 minutes, or until tender.

Sauteing: Heat a frying pan over medium heat. Chop your celery into thin slices that are relatively the same size, so that they cook evenly. Add 1-2 tbsp of vegetable oil to the pan, and add the celery. Cook for 3-5 minutes, or until soft and lightly browned.

Seasonings

Try one of these seasoning ideas, or mix & match and come up with something new!

  • Cook in vegetable stock, and add herbs like parsley, thyme, or dill.
  • Cook with soy sauce, vinegar, and add black pepper
  • Onion powder, salt, and pepper

Storage & Preservation

Celery is stored best in the fridge. It is best stored cut into sticks and wrapped in foil or paper towel. It can also be
stored in water. If you opt for this method of storage, be sure to change the water at least every other day to keep the
celery fresh, and rinse the piece(s) before using them. In the fridge, celery lasts 1-2 weeks.

To freeze celery, first blanch it. To blanch celery, bring a pot of water to a boil and fill a bowl with ice water. Cut your
celery into slices, and boil the slices for 3 minutes. Then transfer them to the ice water and allow them to cool
completely. Drain them, and lay them in a single layer to freeze them. After about two hours, transfer them to a bag or
container. Properly blanched and packaged, they can be stored in the freezer for up to a year.
