Couscous Grain Salad
Ingredients
- 5 oz (about half a small box) plain couscous
- 1 Green bell pepper
- 1 Red bell pepper
- 1 Red onion
- Canned whole kernel corn (no salt added preferred)
- Red wine vinegar or balsamic vinegar (2 tbsp)
- Olive oil (3 tbsp)
- Lemon juice (2 tbsp)
Directions
- Cook the couscous according to the instructions on the box. Allow couscous to cool then put in the fridge.
- Dice red bell peppers, green bell pepper, and red onion. Drain water from canned corn.
- Combine all ingredients with olive oil, vinegar, and lemon juice. Serve, and store unused portion in the fridge for up to four days.
