Couscous Grain Salad

  • 5 oz (about half a small box) plain couscous
  • 1 Green bell pepper
  • 1 Red bell pepper
  • 1 Red onion
  • Canned whole kernel corn (no salt added preferred)
  • Red wine vinegar or balsamic vinegar (2 tbsp)
  • Olive oil (3 tbsp)
  • Lemon juice (2 tbsp)
  1. Cook the couscous according to the instructions on the box. Allow couscous to cool then put in the fridge.
  2. Dice red bell peppers, green bell pepper, and red onion. Drain water from canned corn.
  3. Combine all ingredients with olive oil, vinegar, and lemon juice. Serve, and store unused portion in the fridge for up to four days.
