Bell Pepper Nachos

  • Any color bell peppers (sliced into rings)
  • Ground beef or turkey (cooked and seasoned with taco seasoning)
  • Shredded cheese
  • Salsa
  • Sour cream or Greek yogurt (for dipping)
  1. Arrange the bell pepper rings on a plate or baking sheet.
  2. Spoon the cooked ground meat into each bell pepper ring.
  3. Sprinkle shredded cheese over the meat.
  4. Broil in the oven until the cheese is bubbly and slightly browned.
  5. Serve with salsa and a side of sour cream or Greek yogurt.
