Vegetable Rice Soup

Ingredients

  • 1 Tbsp olive oil
  • 1 onion diced
  • 4 carrots chopped
  • 4 celery chopped
  • 4 cups chicken broth
  • 4 cups water
  • ½ cup rice
  • 1 Tbsp dried parsley

Directions

  1. In a large pot, heat oil over medium-high heat. Add onion, celery, and carrots. Cook 3-4 minutes stirring occasionally.
  2. Add chicken broth and water. Bring to a boil.
  3. When boiling add the rice and parsley. Cover and reduce to medium heat for 15 minutes.
