Taco Spaghetti Squash Boats

Ingredients

  • 2 spaghetti squash
  • 1 lb ground turkey or beef
  • 1 taco seasoning packet
  • Salt and pepper to taste
  • 2 tsp olive oil
  • Optional toppings: salsa, cheese, sour cream, avocado, cilantro

Directions

  1. Preheat oven to 400°F. Cut the spaghetti squash in half lengthwise and scrape out the seeds.
  2. Drizzle the cut sides with olive oil and sprinkle with salt and pepper.
  3. Place the squash cut side down on a baking sheet and bake for 35-45 minutes.
  4. While the squash is baking, heat the meat over medium heat. Once cooked, add the taco seasoning following package directions.
  5. Once finished baking, use a fork to pull the squash strings. Add taco meat to each half and mix in with the squash strings.
  6. Add cheese and bake until melted.
  7. Add the cold toppings.
