Taco Spaghetti Squash Boats
Ingredients
- 2 spaghetti squash
- 1 lb ground turkey or beef
- 1 taco seasoning packet
- Salt and pepper to taste
- 2 tsp olive oil
- Optional toppings: salsa, cheese, sour cream, avocado, cilantro
Directions
- Preheat oven to 400°F. Cut the spaghetti squash in half lengthwise and scrape out the seeds.
- Drizzle the cut sides with olive oil and sprinkle with salt and pepper.
- Place the squash cut side down on a baking sheet and bake for 35-45 minutes.
- While the squash is baking, heat the meat over medium heat. Once cooked, add the taco seasoning following package directions.
- Once finished baking, use a fork to pull the squash strings. Add taco meat to each half and mix in with the squash strings.
- Add cheese and bake until melted.
- Add the cold toppings.
