Parmesan Herb Roasted Acorn Squash

Ingredients

  • 2 acorn squash
  • ¼ cup olive oil
  • 1 cup parmesan cheese
  • Suggested seasonings: 1 tsp garlic powder, ½ tsp salt, dried basil, dried thyme, and dried oregano

Directions

  1. Preheat the oven to 425°F.
  2. Slice off the top and bottom of the squash, then in half. Scoop out the seeds with a spoon. Slice the squash into slices about 1 inch thick.
  3. Add the squash to a large bowl. Add the oil, parmesan, and seasonings. Use clean hands to toss everything together.
  4. Place the squash slices on a baking tray. Bake for 20-25 minutes until soft.
