Meat Stuffed Acorn Squash
Ingredients
- 2 acorn squash
- 4 tsp olive oil
- Salt and pepper to taste
- 1 lb ground chicken, ground beef, ground turkey, or ground sausage
- 1 cup chopped mushrooms
- 1 chopped onion
- 1 sweet apple
- ¼ tsp nutmeg
- 1 tsp garlic powder
- ½ cup parmesan cheese (or any type)
Directions
- Preheat the oven to 400°F.
- Cut the squash in half lengthwise and scoop out the seeds with a spoon.
- Drizzle oil over the inside. Add salt and pepper. Place the cut side up on a baking sheet and bake for 30-40 minutes until edges begin to wrinkle.
- While squash bakes, heat oil in a pan over medium-high heat. Add your meat of choice and cook through.
- Add the mushrooms, onion, apple, salt & pepper, nutmeg, and garlic. Mix well and allow to cook for 5 minutes.
- When the squash is done baking and cool enough to handle, scoop out its flash and add it to the pan. Stir to combine.
- Add the meat mixture into the hollowed squash halves. Sprinkle cheese overtop
- Reduce the oven to 375°F and bake for 10-15 minutes.
