Meat Stuffed Acorn Squash

Ingredients

  • 2 acorn squash
  • 4 tsp olive oil
  • Salt and pepper to taste
  • 1 lb ground chicken, ground beef, ground turkey, or ground sausage
  • 1 cup chopped mushrooms
  • 1 chopped onion
  • 1 sweet apple
  • ¼ tsp nutmeg
  • 1 tsp garlic powder
  • ½ cup parmesan cheese (or any type)

Directions

  1. Preheat the oven to 400°F.
  2. Cut the squash in half lengthwise and scoop out the seeds with a spoon.
  3. Drizzle oil over the inside. Add salt and pepper. Place the cut side up on a baking sheet and bake for 30-40 minutes until edges begin to wrinkle.
  4. While squash bakes, heat oil in a pan over medium-high heat. Add your meat of choice and cook through.
  5. Add the mushrooms, onion, apple, salt & pepper, nutmeg, and garlic. Mix well and allow to cook for 5 minutes.
  6. When the squash is done baking and cool enough to handle, scoop out its flash and add it to the pan. Stir to combine.
  7. Add the meat mixture into the hollowed squash halves. Sprinkle cheese overtop
  8. Reduce the oven to 375°F and bake for 10-15 minutes.
