To help you make the most of the season, we’re sharing two delicious winter-themed recipes that are both healthy and easy to make. Roasted Parmesan Acorn Squash
Ingredients:
1 large acorn squash
⅓ cup grated parmesan cheese
1 tbsp butter, melted
½ tsp garlic powder
Salt & pepper to taste
Directions:
- Preheat oven to 400 degrees F and line a large baking sheet with parchment paper.
- Cut the squash in half, scoop out the seeds, and cut in ½ inch thick moon-shaped slices.
- Mix the parmesan, herbs, melted butter, and spices together in a bowl.
- Coat each piece of squash in the mixture and bake on the lined baking sheet for 25 minutes, or until crispy and slightly browned.
Coconut Snowballs
Ingredients:
1 & ¾ cups unsweetened shredded coconut
2 tsp melted coconut oil
3 tbsp maple syrup
2 tbsp unsweetened coconut milk
½ tsp vanilla extract
½ tsp ground cinnamon
⅛ tsp salt
Directions:
- Place 1 cup of shredded coconut and coconut oil in a food processor and process until it has a paste-like consistency.
- Add the maple syrup, coconut milk, vanilla, cinnamon, and salt and process until well combined. Add ½ cup of shredded coconut plus 2 tbsp and pulse until just combined.
- Shape the mixture into 1-inch balls and coat with the remaining shredded coconut and place on a plate. Refrigerate for an hour before serving.
