Raspberry Baked Oatmeal

Ingredients

  • 3 cups oats
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 cup brown sugar
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 stick butter melted OR ½ applesauce
  • 1 cup raspberries

Directions

  1. Preheat the oven to 350°F.
  2. In a large bowl, stir in oats, baking powder, salt, and cinnamon. Then, add the brown sugar and stir.
  3. In another bowl, whisk together the milk, vanilla, butter, and eggs. Add the liquid to the oat mixture and mix well.
  4. Fold in the raspberries then pour the mixture into a baking dish.
  5. Bake for 35-40 minutes until golden brown. Serve warm.
