Oven Baked Chicken & Veggies

Ingredients
  • 1-2 lbs assorted chicken pieces (wings, thighs, drumsticks, etc.)
  • 3-4 potatoes, cut into chunks
  • 3 carrots, sliced
  • 1 onion, quartered
  • 3 tbsp cooking oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper
Directions
  1. Preheat the oven to 400 degrees F.
  2. Toss the veggies with half the oil and seasonings and spread on a baking sheet.
  3. Rub the chicken with the remaining oil and seasonings and arrange on top.
  4. Roast for 40-50 minutes until the chicken reaches an internal temp of 165 degrees F and the skin is crispy.
