Hearty Three-Bean Chili

Ingredients
  • 1 can of black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can diced tomatoes with juice
  • 1 cup of vegetable broth, tomato juice, or water
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced (or ½ tsp garlic powder)
  • 2 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • Salt and pepper to taste
Directions
  1. In a large pot, sauté the onion, pepper, and garlic until soft.
  2. Add the beans, tomatoes, liquid (like broth or tomato juice) and seasonings. Stir well.
  3. Simmer for 20-25 minutes, stirring occasionally.
