Butternut Squash & Black Bean Wraps
Ingredients
- 3 cups chopped butternut squash, boiled or roasted
- 1 cup cooked quinoa
- 1 cup rinsed black beans
- Chopped scallions
- Whole wheat wraps
- Cheese (Feta, Cotija, Gorgonzola, etc.)
Directions
- Mix the first four ingredients together
- Scoop the mixture onto a wrap
- Top with cheese, and grill or toast, if you like!
