Ingredients:
1 medium butternut squash, peeled, seeded, and cubed
1 medium onion, diced
2 cloves garlic, minced or ½ tsp garlic powder
4 cups low-sodium vegetable or chicken broth
1 tsp olive oil
½ tsp ground nutmeg
½ tsp ground cinnamon
Salt & pepper to taste
Directions:
- Peel and cube the squash, dice the onion, and mince the garlic if using.
- In a large pot, heat the olive oil over medium heat. Add the onions & garlic and sauté for 3-5 minutes.
- Add the cubed butternut squash to the pot and stir to combine. Pour in the broth, making sure that the squash is covered.
- Bring the pot to a boil, then reduce the heat and simmer for 20-25 minutes until the squash is very tender.
- Remove the soup from the heat and transfer to a blender in batches. Blend each batch until smooth.
- Stir in the nutmeg, cinnamon, and any salt and pepper. Adjust seasonings to taste.
