Vegetarian Stuffed Acorn Squash
Ingredients
- 1 acorn squash
- 2 Tbsp olive oil
- Salt and pepper to taste
- 1 cup cooked rice or quinoa
- 1 diced onion
- 1 garlic clove minced or 1 tsp garlic powder
- 1 can beans (drained and rinsed)
- 1 can diced tomatoes
- ½ tsp dried thyme or Italian seasoning
- Optional: shredded cheese
Directions
- Preheat the oven to 400°F.
- Cut the squash in half lengthwise and scoop out the seeds with a spoon.
- Drizzle oil over the inside. Add salt and pepper. Place the cut side down on a baking sheet and bake for 30-40 minutes until fork tender.
- While the squash bakes, heat oil in a pan. Add the onion and garlic and cook for 3-5 minutes.
- Add the cooked rice/quinoa and the drained beans. Season with your seasonings. Add the tomatoes and heat through.
- When the squash is fork tender, turn them cut side up and add your mixture. Top with cheese and bake for an additional 5 minutes.
