Vegetarian Stuffed Acorn Squash

Ingredients

  • 1 acorn squash
  • 2 Tbsp olive oil
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa
  • 1 diced onion
  • 1 garlic clove minced or 1 tsp garlic powder
  • 1 can beans (drained and rinsed)
  • 1 can diced tomatoes
  • ½ tsp dried thyme or Italian seasoning
  • Optional: shredded cheese

Directions

  1. Preheat the oven to 400°F.
  2. Cut the squash in half lengthwise and scoop out the seeds with a spoon.
  3. Drizzle oil over the inside. Add salt and pepper. Place the cut side down on a baking sheet and bake for 30-40 minutes until fork tender.
  4. While the squash bakes, heat oil in a pan. Add the onion and garlic and cook for 3-5 minutes.
  5. Add the cooked rice/quinoa and the drained beans. Season with your seasonings. Add the tomatoes and heat through.
  6. When the squash is fork tender, turn them cut side up and add your mixture. Top with cheese and bake for an additional 5 minutes.
