Vegetable Rice Soup
Ingredients
- 1 Tbsp olive oil
- 1 onion diced
- 4 carrots chopped
- 4 celery chopped
- 4 cups chicken broth
- 4 cups water
- ½ cup rice
- 1 Tbsp dried parsley
Directions
- In a large pot, heat oil over medium-high heat. Add onion, celery, and carrots. Cook 3-4 minutes stirring occasionally.
- Add chicken broth and water. Bring to a boil.
- When boiling add the rice and parsley. Cover and reduce to medium heat for 15 minutes.
