Twice-Baked Spaghetti Squash

Ingredients

  • 1 spaghetti squash
  • 1 cup pasta sauce
  • ½ – 1 cup shredded mozzarella or parmesan cheese
  • Salt and pepper to taste
  • Optional: Italian seasoning or dried oregano

Directions

  1. Preheat the oven to 375°F.
  2. Cut the spaghetti squash in half lengthwise. With a spoon, remove the seeds and discard.
  3. Place the squash cut side down on a baking sheet. Bake for 45 minutes.
  4. Remove from the oven and allow to cool slightly. With a fork, loosen and separate spaghetti squash strands from the shell.
  5. Place the strands in a bowl. Add pasta sauce and seasonings. Mix and add the mixture back into the shell. Top with the cheese.
  6. Bake for 5-9 minutes until the cheese is melted. Serve directly from the shell.
