Twice-Baked Spaghetti Squash
Ingredients
- 1 spaghetti squash
- 1 cup pasta sauce
- ½ – 1 cup shredded mozzarella or parmesan cheese
- Salt and pepper to taste
- Optional: Italian seasoning or dried oregano
Directions
- Preheat the oven to 375°F.
- Cut the spaghetti squash in half lengthwise. With a spoon, remove the seeds and discard.
- Place the squash cut side down on a baking sheet. Bake for 45 minutes.
- Remove from the oven and allow to cool slightly. With a fork, loosen and separate spaghetti squash strands from the shell.
- Place the strands in a bowl. Add pasta sauce and seasonings. Mix and add the mixture back into the shell. Top with the cheese.
- Bake for 5-9 minutes until the cheese is melted. Serve directly from the shell.
