Tofu Stir-Fry

Ingredients
  • 1 block firm tofu, drained, patted dry with a paper towel, and cubed
  • 2 cups of mixed veggies (try bell peppers, broccoli, and carrots)
  • 2 tbsp soy sauce
  • 1 tbsp sesame or olive oil
  • 1 tsp garlic powder or 2 cloves minced garlic
  • Optional: 1 tsp ginger
Directions
  1. Heat the oil in a pan and sauté the tofu cubes until golden on all sides.
  2. Add the garlic, ginger, and veggies, and stir-fry for 5-7 minutes until tender.
  3. Stir in the soy sauce and cook for 1-2 minutes more. Serve over rice or noodles.
