Tofu Stir-Fry
Ingredients
- 1 block firm tofu, drained, patted dry with a paper towel, and cubed
- 2 cups of mixed veggies (try bell peppers, broccoli, and carrots)
- 2 tbsp soy sauce
- 1 tbsp sesame or olive oil
- 1 tsp garlic powder or 2 cloves minced garlic
- Optional: 1 tsp ginger
Directions
- Heat the oil in a pan and sauté the tofu cubes until golden on all sides.
- Add the garlic, ginger, and veggies, and stir-fry for 5-7 minutes until tender.
- Stir in the soy sauce and cook for 1-2 minutes more. Serve over rice or noodles.
