Strawberry Bruschetta Chicken
Ingredients
- 4 chicken cutlets, or you can use canned chicken drained
- ½ tsp salt
- ¼ tsp black pepper
- 1 Tbsp olive oil
- Optional: mozzarella cheese
For the strawberry bruschetta:
- 3 cups diced strawberries
- ½ cup chopped red onion
- 1 Tbsp basil
- 1 Tbsp balsamic vinegar
- 1 Tbsp olive oil
- Salt and pepper
Directions
- In a bowl, combine the strawberries, red onion, balsamic vinegar, olive oil, salt, pepper, and basil. Stir gently to mix, then taste and add more basil if you’d like a bolder herb flavor. Store in the fridge while you prepare the chicken.
- Heat oil in a pan over medium heat. Season your chicken on both sides and add to the pan. Cook fully, about 5-7 minutes per side. For canned chicken, the chicken is already cooked, just warm it up in the pan.
- Add cheese if using and top with the strawberry bruschetta.
