Strawberry Bruschetta Chicken

Ingredients

  • 4 chicken cutlets, or you can use canned chicken drained
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 Tbsp olive oil
  • Optional: mozzarella cheese

For the strawberry bruschetta:

  • 3 cups diced strawberries
  • ½ cup chopped red onion
  • 1 Tbsp basil
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • Salt and pepper

Directions

  1. In a bowl, combine the strawberries, red onion, balsamic vinegar, olive oil, salt, pepper, and basil. Stir gently to mix, then taste and add more basil if you’d like a bolder herb flavor. Store in the fridge while you prepare the chicken.
  2. Heat oil in a pan over medium heat. Season your chicken on both sides and add to the pan. Cook fully, about 5-7 minutes per side. For canned chicken, the chicken is already cooked, just warm it up in the pan.
  3. Add cheese if using and top with the strawberry bruschetta.
