Spaghetti Squash Stir-Fry
Ingredients
- 1 spaghetti squash
- 1 Tbsp olive oil
- 1 can chicken (drained) or ½ lb ground chicken
- ⅓ cup soy sauce
- 2 Tbsp peanut butter
- 3 garlic cloves minced or 2 tsp garlic powder
- Optional produce: diced mushrooms, sliced bell pepper, thinly sliced red onion
Directions
- Preheat the oven to 400°F. Cut the spaghetti squash in half lengthwise and scrape out the seeds.
- Drizzle the cut sides with olive oil and sprinkle with salt and pepper.
- Place the squash cut side down on a baking sheet and bake for 35-45 minutes.
- While the squash bakes, heat chicken over medium heat in a pan. Add the garlic and cook for 3-5 minutes.
- Add any produce you are using, and cook for 4-6 minutes. Add the soy sauce and peanut butter, stirring to combine.
- When the squash is done, use a fork to pull apart the squash strings and add the strings to the pan, combing well.
