Spaghetti Squash Stir-Fry

Ingredients

  • 1 spaghetti squash
  • 1 Tbsp olive oil
  • 1 can chicken (drained) or ½ lb ground chicken
  • ⅓ cup soy sauce
  • 2 Tbsp peanut butter
  • 3 garlic cloves minced or 2 tsp garlic powder
  • Optional produce: diced mushrooms, sliced bell pepper, thinly sliced red onion

Directions

  1. Preheat the oven to 400°F. Cut the spaghetti squash in half lengthwise and scrape out the seeds.
  2. Drizzle the cut sides with olive oil and sprinkle with salt and pepper.
  3. Place the squash cut side down on a baking sheet and bake for 35-45 minutes.
  4. While the squash bakes, heat chicken over medium heat in a pan. Add the garlic and cook for 3-5 minutes.
  5. Add any produce you are using, and cook for 4-6 minutes. Add the soy sauce and peanut butter, stirring to combine.
  6. When the squash is done, use a fork to pull apart the squash strings and add the strings to the pan, combing well.
