Spaghetti Squash Chicken Alfredo Bake
Ingredients
- 2 spaghetti squash
- 1-2 cans of chicken (drained)
- 1 jar alfredo sauce
- Salt and pepper to taste
- 2 tsp olive oil
- 1 cup shredded mozzarella or parmesan cheese
- 1 cup spinach (optional)
Directions
- Preheat the oven to 400°F. Cut the spaghetti squash in half lengthwise and scrape out the seeds.
- Drizzle the cut sides with olive oil and sprinkle with salt and pepper.
- Place the squash cut side down on a baking sheet and bake for 35-45 minutes.
- Remove from the oven and allow to cool slightly to handle. Use a fork to pull apart the squash strings.
- Reduce the oven to 350°F. Add the chicken, squash strings, alfredo sauce, and spinach to a baking dish.
- Bake for 15-20 minutes. Add the cheese and bake again until melted.
