Spaghetti Squash Chicken Alfredo Bake

Ingredients

  • 2 spaghetti squash
  • 1-2 cans of chicken (drained)
  • 1 jar alfredo sauce
  • Salt and pepper to taste
  • 2 tsp olive oil
  • 1 cup shredded mozzarella or parmesan cheese
  • 1 cup spinach (optional)

Directions

  1. Preheat the oven to 400°F. Cut the spaghetti squash in half lengthwise and scrape out the seeds.
  2. Drizzle the cut sides with olive oil and sprinkle with salt and pepper.
  3. Place the squash cut side down on a baking sheet and bake for 35-45 minutes.
  4. Remove from the oven and allow to cool slightly to handle. Use a fork to pull apart the squash strings.
  5. Reduce the oven to 350°F. Add the chicken, squash strings, alfredo sauce, and spinach to a baking dish.
  6. Bake for 15-20 minutes. Add the cheese and bake again until melted.
