Spaghetti Squash Casserole

Ingredients

  • 1 spaghetti squash
  • 2 tsp olive oil
  • 1 lb ground turkey or ground beef
  • Optional produce: 1 small onion, 1 bell pepper
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 can diced tomatoes or tomato sauce
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes
  • 1 cup shredded cheese of choice

Directions

  1. Preheat the oven to 400° F. Cut the squash in half lengthwise and scoop out the seeds with a spoon. Place cut side down on a baking sheet. Bake squash for 30-45 minutes.
  2. When squash is cool enough to handle, pull the squash strings out with a fork and transfer to a bowl.
  3. Reduce oven temp to 350°F.
  4. Heat olive oil in a deep pan and add the turkey or ground beef, produce, and salt and pepper. Cook until meat is cooked.
  5. Transfer the meat to a baking casserole dish and add the tomatoes, squash strings, and rest of seasonings. Mix well.
  6. Bake uncovered for 20 minutes. Add the cheese on top and bake for an additional 5-10 minutes.
