Spaghetti Squash Casserole
Ingredients
- 1 spaghetti squash
- 2 tsp olive oil
- 1 lb ground turkey or ground beef
- Optional produce: 1 small onion, 1 bell pepper
- 1 tsp salt
- ½ tsp black pepper
- 1 can diced tomatoes or tomato sauce
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes
- 1 cup shredded cheese of choice
Directions
- Preheat the oven to 400° F. Cut the squash in half lengthwise and scoop out the seeds with a spoon. Place cut side down on a baking sheet. Bake squash for 30-45 minutes.
- When squash is cool enough to handle, pull the squash strings out with a fork and transfer to a bowl.
- Reduce oven temp to 350°F.
- Heat olive oil in a deep pan and add the turkey or ground beef, produce, and salt and pepper. Cook until meat is cooked.
- Transfer the meat to a baking casserole dish and add the tomatoes, squash strings, and rest of seasonings. Mix well.
- Bake uncovered for 20 minutes. Add the cheese on top and bake for an additional 5-10 minutes.
