Southern-Style Collard Greens

Ingredients

  • 1 large collard greens bunch
  • 2-3 Tbsp vegetable oil or bacon fat
  • 1 small onion chopped
  • 2-3 garlic cloves minced or 1 tsp garlic powder
  • 1 tsp smoked or regular paprika
  • ½ tsp red pepper flakes
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups chicken or vegetable broth
  • 1 tsp apple cider or white vinegar

Directions

  1. Wash the collard greens thoroughly and remove the thick stems. Roughly chop the leaves.
  2. Heat oil or bacon fat in a pot over medium heat.
  3. Add the onions and saute for 2-3 minutes, then add the garlic.
  4. Add the rest of the spices.
  5. Add the collard greens and mix.
  6. Pour in broth to partially cover greens.
  7. Cover and simmer for 30-45 minutes, stirring occasionally.
  8. Stir in the vinegar and add salt and pepper.
