Southern-Style Collard Greens
Ingredients
- 1 large collard greens bunch
- 2-3 Tbsp vegetable oil or bacon fat
- 1 small onion chopped
- 2-3 garlic cloves minced or 1 tsp garlic powder
- 1 tsp smoked or regular paprika
- ½ tsp red pepper flakes
- 1 tsp salt
- ½ tsp black pepper
- 2 cups chicken or vegetable broth
- 1 tsp apple cider or white vinegar
Directions
- Wash the collard greens thoroughly and remove the thick stems. Roughly chop the leaves.
- Heat oil or bacon fat in a pot over medium heat.
- Add the onions and saute for 2-3 minutes, then add the garlic.
- Add the rest of the spices.
- Add the collard greens and mix.
- Pour in broth to partially cover greens.
- Cover and simmer for 30-45 minutes, stirring occasionally.
- Stir in the vinegar and add salt and pepper.
