Southern Mustard Greens
Ingredients
- 2 bunches mustard greens
- 2 ½ cups water
- 4 strips or bacon or ham (canned or fresh)
- 1 onion chopped
- Salt and pepper to taste
Directions
- Thoroughly wash the mustard greens. Trim off the thick stems and discard.
- Bring 1 cup of the water to a boil in a large pot. Add the mustard greens.
- Cover and reduce heat to slow for 15-20 minutes. Drain the greens when done.
- Add the bacon or ham to the pot and fry over medium heat until crispy. Remove from the pot and set aside.
- Add the onion to the pot and saute over medium heat for 3-5 minutes. Add the bacon or ham back to the pot.
- Add the cooked greens to the pot and stir in the remaining 1.5 cups of water as well as the salt and pepper. Stir to combine.
- Cover the pot and simmer on low for 30 minutes.
