Southern Mustard Greens

Ingredients

  • 2 bunches mustard greens
  • 2 ½ cups water
  • 4 strips or bacon or ham (canned or fresh)
  • 1 onion chopped
  • Salt and pepper to taste

Directions

  1. Thoroughly wash the mustard greens. Trim off the thick stems and discard.
  2. Bring 1 cup of the water to a boil in a large pot. Add the mustard greens.
  3. Cover and reduce heat to slow for 15-20 minutes. Drain the greens when done.
  4. Add the bacon or ham to the pot and fry over medium heat until crispy. Remove from the pot and set aside.
  5. Add the onion to the pot and saute over medium heat for 3-5 minutes. Add the bacon or ham back to the pot.
  6. Add the cooked greens to the pot and stir in the remaining 1.5 cups of water as well as the salt and pepper. Stir to combine.
  7. Cover the pot and simmer on low for 30 minutes.
