Simple Chicken and Rice Casserole
Ingredients
- 4 chicken breasts
- 1 cup white rice
- 1.5 cups water
- 2 cups broccoli chopped
- 1 dry onion soup mix packet
- 1 can condensed cream of mushroom soup
Directions
- Preheat the oven to 325°F.
- Spray a 9×13-inch casserole dish or glass baking pan with cooking spray (the rice doesn’t cook well in a metal pan). Add chicken breasts and season with salt & pepper. Add the broccoli.
- Pour uncooked rice over chicken. Sprinkle it with onion soup mix.
- Combine mushroom soup and 1 ½ cups of water. Pour over chicken.
- Cover and bake for 1 hour 15 minutes or until rice is tender.
