Parmesan Herb Roasted Acorn Squash
Ingredients
- 2 acorn squash
- ¼ cup olive oil
- 1 cup parmesan cheese
- Suggested seasonings: 1 tsp garlic powder, ½ tsp salt, dried basil, dried thyme, and dried oregano
Directions
- Preheat the oven to 425°F.
- Slice off the top and bottom of the squash, then in half. Scoop out the seeds with a spoon. Slice the squash into slices about 1 inch thick.
- Add the squash to a large bowl. Add the oil, parmesan, and seasonings. Use clean hands to toss everything together.
- Place the squash slices on a baking tray. Bake for 20-25 minutes until soft.
