Oven Roasted Potatoes

Ingredients

  • 2 lbs red, gold, or russet potatoes
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 2 tsp any type of dried herbs (thyme, parsley, basil, Italian seasoning)
  • ½ tsp paprika
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 425°F.
  2. Scrub the potatoes and cut them into 1-inch cubes.
  3. Toss the potatoes with olive oil, garlic powder, herbs, paprika, salt, and pepper.
  4. Spread them in a single layer on a baking sheet and roast for 30 to 35 minutes or until browned and tender.
