Potatoes are an excellent source of potassium, which is good for heart health and regulating blood pressure. Potatoes also contain vitamin C, which is good for the immune system. The skin on the potato contains a good amount of fiber, good for digestive health.
Cooking Methods
Potatoes can be cooked many different ways!
Boiling: Peel if desired and cut into even pieces. Cover with water and bring to a boil. Drain when done. Best method for mashed potatoes, potato salad, and soups.
Roasting: Toss potato chunks with oil, salt, pepper, and herbs. Roast at 400 degrees for 30-45 minutes until golden and crisp.
Sauteing: Dice potatoes. Cook in oil or butter over medium heat until tender. Great for making breakfast potatoes.
Microwaving: Puncture washed potato with a fork. Microwave for 2-4 minutes per side. This is a quick, convenient method.
Seasonings
Potatoes are great with many seasonings. Classic seasonings include salt, pepper, garlic (fresh or powder), onion powder, paprika, and oil or butter. Good herb pairings include thyme, basil, parsley, or rosemary.
Storage & Preservation
It is best to store potatoes at room temperature, in a cool dry place. Do not wash the potatoes until ready to use. Sprouted potatoes are still safe to use, if they are still firm and not mushy. Simply trim away the sprouted portions.
