Mustard Green Apple Salad

Ingredients

  • 1 bunch mustard greens
  • 1 green apple
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 Tbsp olive oil
  • 2 Tbsp apple cider or white vinegar
  • If available: 1 lemon, 1 Tbsp maple syrup, 1 tsp Dijon mustard

Directions

  1. Wash the mustard greens and remove the thick stem. Chop the greens.
  2. Squeeze half a lemon over the greens and add half of the salt. Massage the greens with your hands for 1 minute.
  3. Chop the apple.
  4. In a small bowl, mix the other half of the lemon, remaining salt, olive oil, vinegar, maple syrup, mustard, and pepper.
  5. Add the apple to the greens and toss with the dressing.
