Mustard Green Apple Salad
Ingredients
- 1 bunch mustard greens
- 1 green apple
- ½ tsp salt
- ¼ tsp black pepper
- 3 Tbsp olive oil
- 2 Tbsp apple cider or white vinegar
- If available: 1 lemon, 1 Tbsp maple syrup, 1 tsp Dijon mustard
Directions
- Wash the mustard greens and remove the thick stem. Chop the greens.
- Squeeze half a lemon over the greens and add half of the salt. Massage the greens with your hands for 1 minute.
- Chop the apple.
- In a small bowl, mix the other half of the lemon, remaining salt, olive oil, vinegar, maple syrup, mustard, and pepper.
- Add the apple to the greens and toss with the dressing.
