Maple Roasted Acorn Squash
Ingredients
- 2 acorn squash
- 2 tsp olive oil
- 4 Tbsp butter
- 2 Tbsp maple syrup OR honey
- ½ tsp salt
- ½ tsp cinnamon
Directions
- Preheat the oven to 400°F.
- Cut the squash in half lengthwise. Scrape out the seeds with a spoon.
- Place squash cut side up on the baking sheet. Drizzle olive oil and 1 Tbsp of butter into each half. Drizzle ½ Tbsp maple syrup and sprinkle the salt and cinnamon overtop.
- Bake for 45-60 minutes until tender.
- Drizzle the remaining maple syrup over top when done baking.
