Maple Roasted Acorn Squash

Ingredients

  • 2 acorn squash
  • 2 tsp olive oil
  • 4 Tbsp butter
  • 2 Tbsp maple syrup OR honey
  • ½ tsp salt
  • ½ tsp cinnamon

Directions

  1. Preheat the oven to 400°F.
  2. Cut the squash in half lengthwise. Scrape out the seeds with a spoon.
  3. Place squash cut side up on the baking sheet. Drizzle olive oil and 1 Tbsp of butter into each half. Drizzle ½ Tbsp maple syrup and sprinkle the salt and cinnamon overtop.
  4. Bake for 45-60 minutes until tender.
  5. Drizzle the remaining maple syrup over top when done baking.
