Lemon Chicken Soup

Ingredients

  • 1 Tbsp olive oil
  • 1 onion diced
  • 1 carrot diced
  • 2 celery stalks diced
  • 2 garlic cloves minced or 1 tsp garlic powder
  • 12 oz of chicken breast or canned chicken drained
  • 6 cups chicken broth
  • ¾ cup orzo or egg noodles
  • Juice of 1-2 lemons
  • Salt and pepper to taste
  • 1 Tbsp Italian seasoning

Directions

  1. Heat the olive oil in a large pot and cook the onion, carrot and celery for 8-10 minutes over medium heat until softened.
  2. Add the garlic and cook for another minute, then add the chicken and chicken broth.
  3. Bring to a boil, then lower the heat to medium-low, cover with a lid and simmer for 15 minutes.
  4. Take out the chicken. Add the orzo to the pot and continue to cook for 10 minutes.
  5. If using chicken breasts, shred the chicken with two forks and add it back to the pot. Add the salt, pepper, and Italian seasoning.
  6. Simmer for 10 more minutes.
