Lemon Chicken Soup
Ingredients
- 1 Tbsp olive oil
- 1 onion diced
- 1 carrot diced
- 2 celery stalks diced
- 2 garlic cloves minced or 1 tsp garlic powder
- 12 oz of chicken breast or canned chicken drained
- 6 cups chicken broth
- ¾ cup orzo or egg noodles
- Juice of 1-2 lemons
- Salt and pepper to taste
- 1 Tbsp Italian seasoning
Directions
- Heat the olive oil in a large pot and cook the onion, carrot and celery for 8-10 minutes over medium heat until softened.
- Add the garlic and cook for another minute, then add the chicken and chicken broth.
- Bring to a boil, then lower the heat to medium-low, cover with a lid and simmer for 15 minutes.
- Take out the chicken. Add the orzo to the pot and continue to cook for 10 minutes.
- If using chicken breasts, shred the chicken with two forks and add it back to the pot. Add the salt, pepper, and Italian seasoning.
- Simmer for 10 more minutes.
