Easy Lentil Sloppy Joes
Ingredients
- Approx. 3 cups cooked lentils
- 1 (15oz) can sloppy joe sauce (like Manwich)
- 1 tbsp olive oil or butter
- 1 small onion, finely chopped
- Burger buns or sandwich rolls
Directions
- Boil the lentils according to the instructions on the bag. Drain.
- Sauté the onion with the oil/butter in a skillet until soft (about 3-4 minutes).
- Stir in the drained lentils and cook for 2-3 minutes to warm.
- Pour in the sloppy joe sauce, stir, and simmer for about 5 minutes
- Spoon onto buns, add your favorite toppings (try pickles, coleslaw, chopped bell peppers, etc.) and enjoy!
