Easy Lentil Sloppy Joes

Ingredients
  • Approx. 3 cups cooked lentils
  • 1 (15oz) can sloppy joe sauce (like Manwich)
  • 1 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • Burger buns or sandwich rolls
Directions
  1. Boil the lentils according to the instructions on the bag. Drain.
  2. Sauté the onion with the oil/butter in a skillet until soft (about 3-4 minutes).
  3. Stir in the drained lentils and cook for 2-3 minutes to warm.
  4. Pour in the sloppy joe sauce, stir, and simmer for about 5 minutes
  5. Spoon onto buns, add your favorite toppings (try pickles, coleslaw, chopped bell peppers, etc.) and enjoy!
