Collard Greens Salad
Ingredients
- 1 bunch collard greens washed
- ⅛ cup olive oil
- ¼ tsp salt
- ½ tsp black pepper
- ¼ cup apple cider vinegar
- 6-8 sun dried or cherry tomatoes
- ⅓ cup red onion chopped
Directions
- Remove the step and chop the collard greens and place in a large bowl.
- Pour olive oil over the greens and massage with your hands for 30 seconds.
- In a small bowl, mix together apple cider vinegar, chopped tomatoes, onions, red pepper flakes,salt,and black pepper. Pour over the collard greens and let sit in the refrigerator before serving.
