Collard Greens Salad

Ingredients

  • 1 bunch collard greens washed
  • ⅛ cup olive oil
  • ¼ tsp salt
  • ½ tsp black pepper
  • ¼ cup apple cider vinegar
  • 6-8 sun dried or cherry tomatoes
  • ⅓ cup red onion chopped

Directions

  1. Remove the step and chop the collard greens and place in a large bowl.
  2. Pour olive oil over the greens and massage with your hands for 30 seconds.
  3. In a small bowl, mix together apple cider vinegar, chopped tomatoes, onions, red pepper flakes,salt,and black pepper. Pour over the collard greens and let sit in the refrigerator before serving.
