Blueberry Muffins
Ingredients
- 1 ½ cups all purpose flour
- ¾ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- ⅓ cup vegetable oil, canola oil, OR melted butter
- 1 egg
- ⅓ cup milk
- 1 cup blueberries
Crumb Topping:
- ½ cup sugar
- ⅓ cup all purpose flour
- ¼ cup melted butter
- 1 tsp cinnamon
Directions
- Preheat oven to 400°F. Grease a muffin pan or use liners.
- Whisk flour, sugar, baking powder, and salt together in a bowl.
- Add the oil, egg, and milk and stir until combined, then add the blueberries.
- Make the crumb topping in a separate bowl by combining sugar, flour, butter, and cinnamon. Mix with a fork.
- Add the muffin batter to the muffin cups, filling to the top. Sprinkle the crumb topping over top.
- Bake for 20-25 minutes.
