Blueberry Muffins

Ingredients

  • 1 ½ cups all purpose flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ⅓ cup vegetable oil, canola oil, OR melted butter
  • 1 egg
  • ⅓ cup milk
  • 1 cup blueberries

Crumb Topping:

  • ½ cup sugar
  • ⅓ cup all purpose flour
  • ¼ cup melted butter
  • 1 tsp cinnamon

Directions

  1. Preheat oven to 400°F. Grease a muffin pan or use liners.
  2. Whisk flour, sugar, baking powder, and salt together in a bowl.
  3. Add the oil, egg, and milk and stir until combined, then add the blueberries.
  4. Make the crumb topping in a separate bowl by combining sugar, flour, butter, and cinnamon. Mix with a fork.
  5. Add the muffin batter to the muffin cups, filling to the top. Sprinkle the crumb topping over top.
  6. Bake for 20-25 minutes.
