Autumn Pear Salad
Ingredients
- 2 pears, sliced thin
- ½ cup chopped walnuts
- 1 Tbsp brown sugar
- 1 Tbsp butter
- 2 cups spinach
- 2 cups romain or other green lettuce
- ½ cup parmesan cheese
- Optional: ⅓ cup dried cranberries
Directions
- In a skillet, melt butter along with brown sugar over medium heat. Once the mixture has melted add walnuts and cook, stirring constantly until caramelized, about 2 minutes. Transfer to a plate in a single layer to cool.
- Layer lettuce and pears in a large bowl and toss with dressing or choice. Balsamic is recommended. Top with parmesan, dried cranberries and candied walnuts.
