Autumn Pear Salad

Ingredients

  • 2 pears, sliced thin
  • ½ cup chopped walnuts
  • 1 Tbsp brown sugar
  • 1 Tbsp butter
  • 2 cups spinach
  • 2 cups romain or other green lettuce
  • ½ cup parmesan cheese
  • Optional: ⅓ cup dried cranberries

Directions

  1. In a skillet, melt butter along with brown sugar over medium heat. Once the mixture has melted add walnuts and cook, stirring constantly until caramelized, about 2 minutes. Transfer to a plate in a single layer to cool.
  2. Layer lettuce and pears in a large bowl and toss with dressing or choice. Balsamic is recommended. Top with parmesan, dried cranberries and candied walnuts.
