White Bean and Spinach Pasta
Ingredients
- 1 can cannellini or great northern beans
- 8 oz (½ pound) whole wheat or white pasta (try elbows, rotini, or bowties)
- Spinach (2 cups fresh, ½ cup frozen, thawed & drained, or ½ cup canned, drained)
- 2 cloves garlic, minced (or ½ tsp garlic powder)
- 2 tbsp cooking oil (olive oil preferred, but can use any)
- 1 pinch red pepper flakes
- Salt & pepper to taste
- Parmesan cheese (optional, for serving)
Directions
- Cook pasta according to package directions; reserve ½ cup of pasta water before draining.
- In a skillet, heat the garlic and oil until fragrant.
- Add spinach, beans, red pepper flakes, salt, and pepper. Cook until heated through.
- Toss with pasta, adding reserved pasta water as needed to loosen.
- Sprinkle with parmesan to serve (optional).
