White Bean and Spinach Pasta

Ingredients
  • 1 can cannellini or great northern beans
  • 8 oz (½ pound) whole wheat or white pasta (try elbows, rotini, or bowties)
  • Spinach (2 cups fresh, ½ cup frozen, thawed & drained, or ½ cup canned, drained)
  • 2 cloves garlic, minced (or ½ tsp garlic powder)
  • 2 tbsp cooking oil (olive oil preferred, but can use any)
  • 1 pinch red pepper flakes
  • Salt & pepper to taste
  • Parmesan cheese (optional, for serving)
Directions
  1. Cook pasta according to package directions; reserve ½ cup of pasta water before draining.
  2. In a skillet, heat the garlic and oil until fragrant.
  3. Add spinach, beans, red pepper flakes, salt, and pepper. Cook until heated through.
  4. Toss with pasta, adding reserved pasta water as needed to loosen.
  5. Sprinkle with parmesan to serve (optional).
