Sweet Potato Kale Salad

Ingredients

  • 2 sweet potatoes
  • 1 can chickpeas (drained and rinsed)
  • 3 Tbsp olive oil
  • Suggested seasonings: 1 tsp chili powder, 2 tsp paprika, 1 tsp onion powder, 1 tsp cumin
  • 6 cups chopped kale

Dressing:

  • ⅓ cup olive oil
  • 3 tbsp honey
  • 2 tbsp lemon juice
  • Optional: 2 Tbsp dijon mustard

Directions

  1. Preheat the oven to 425°F.
  2. Dice sweet potatoes into small pieces
  3. On a baking sheet, add sweet potatoes, chickpeas, olive oil, and seasonings. Toss to coat well.
  4. Bake for 20 minutes, toss everything, then bake another 20 minutes.
  5. Combine all dressing ingredients in a bowl and whisk well.
  6. Add the kale and a little olive oil to a large bowl. Massage the kale.
  7. Add the sweet potatoes and chickpeas to the kale. Top with dressing. Add additional toppings such as cucumbers, avocado, tomatoes, or feta cheese.
