Sweet Potato Kale Salad
Ingredients
- 2 sweet potatoes
- 1 can chickpeas (drained and rinsed)
- 3 Tbsp olive oil
- Suggested seasonings: 1 tsp chili powder, 2 tsp paprika, 1 tsp onion powder, 1 tsp cumin
- 6 cups chopped kale
Dressing:
- ⅓ cup olive oil
- 3 tbsp honey
- 2 tbsp lemon juice
- Optional: 2 Tbsp dijon mustard
Directions
- Preheat the oven to 425°F.
- Dice sweet potatoes into small pieces
- On a baking sheet, add sweet potatoes, chickpeas, olive oil, and seasonings. Toss to coat well.
- Bake for 20 minutes, toss everything, then bake another 20 minutes.
- Combine all dressing ingredients in a bowl and whisk well.
- Add the kale and a little olive oil to a large bowl. Massage the kale.
- Add the sweet potatoes and chickpeas to the kale. Top with dressing. Add additional toppings such as cucumbers, avocado, tomatoes, or feta cheese.
