Spicy Kale Chicken Salad

Ingredients
  • Bag of kale
  • 1 cup raw, julienned carrots
  • 1 cup raw, julienned beets
  • ginger root
  • ¼ cup raw quinoa (½ cup cooked)
  • 1 cup cooked chicken
  • Your preferred salad dressing (try a spicy vinaigrette).
Directions
  1. Cook quinoa according to instructions on package.
  2. Chop kale into bite-sized pieces.
  3. Add julienned carrots, beets, and grated ginger root.
  4. Toss in 2 tbsp of dressing, add more if needed.
  5. Add chicken on top
