Spicy Kale Chicken Salad
Ingredients
- Bag of kale
- 1 cup raw, julienned carrots
- 1 cup raw, julienned beets
- ginger root
- ¼ cup raw quinoa (½ cup cooked)
- 1 cup cooked chicken
- Your preferred salad dressing (try a spicy vinaigrette).
Directions
- Cook quinoa according to instructions on package.
- Chop kale into bite-sized pieces.
- Add julienned carrots, beets, and grated ginger root.
- Toss in 2 tbsp of dressing, add more if needed.
- Add chicken on top
