Simple Fish Chowder

Ingredients
  • 1 lb mild white fish, cut into bite-sized chunks
  • 2 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 medium potatoes, chopped
  • 2 cloves garlic, minced (or ½ tsp garlic powder)
  • 3 cups of low-sodium chicken or vegetable broth
  • 1 cup corn kernels (fresh, frozen, or canned/drained)
  • 1 cup milk
  • Salt, pepper, and herbs of your choice (try thyme, parsley, basil, etc.)
Directions
  1. In a large pot, heat the butter/olive oil over medium heat. Add the onion, carrots, and garlic. Cook for 4-5 minutes until softened.
  2. Stir in the diced potatoes, seasonings, and broth. Bring to a boil, then reduce to a simmer. Cook for 12-15 minutes, until potatoes are tender.
  3. Stir in the fish and the corn. Simmer gently for 5-7 minutes, until the fish is cooked thoroughly and flakes easily.
  4. Lower the heat and stir in the milk. Season with salt and pepper, then serve.
