Simple Fish Chowder
Ingredients
- 1 lb mild white fish, cut into bite-sized chunks
- 2 tbsp olive oil or butter
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 2 medium potatoes, chopped
- 2 cloves garlic, minced (or ½ tsp garlic powder)
- 3 cups of low-sodium chicken or vegetable broth
- 1 cup corn kernels (fresh, frozen, or canned/drained)
- 1 cup milk
- Salt, pepper, and herbs of your choice (try thyme, parsley, basil, etc.)
Directions
- In a large pot, heat the butter/olive oil over medium heat. Add the onion, carrots, and garlic. Cook for 4-5 minutes until softened.
- Stir in the diced potatoes, seasonings, and broth. Bring to a boil, then reduce to a simmer. Cook for 12-15 minutes, until potatoes are tender.
- Stir in the fish and the corn. Simmer gently for 5-7 minutes, until the fish is cooked thoroughly and flakes easily.
- Lower the heat and stir in the milk. Season with salt and pepper, then serve.
