Shrimp & Veggie Pasta
Ingredients
- 8oz spaghetti (or pasta of your choice)
- 1 lb shrimp, peeled
- 1 zucchini, sliced into half moons
- 1 cup cherry tomatoes, halved
- 3 tbsp cooking oil
- 3 cloves garlic, minced (or ½ tsp garlic powder)
- Juice of 1 lemon
- Salt & pepper to taste
- Basil or parsley (dried or fresh, as a garnish – optional)
Directions
- Boil the pasta according to package directions, then drain and set aside.
- Add 1 tbsp of the cooking oil to a skillet, and warm over medium-low heat. Add the shrimp and cook for 2-3 minutes per side, until opaque.
- Remove the shrimp from the skillet and set aside. In the same skillet, add the other 2 tbsp of cooking oil, and sauté the zucchini, cherry tomatoes, and garlic/garlic powder for 4-5 minutes, until softened and lightly caramelized.
- Add the drained pasta, shrimp, and lemon juice to the skillet, and toss together.
- Adjust seasonings as needed, garnish, and enjoy!
