Shrimp & Veggie Pasta

Ingredients
  • 8oz spaghetti (or pasta of your choice)
  • 1 lb shrimp, peeled
  • 1 zucchini, sliced into half moons
  • 1 cup cherry tomatoes, halved
  • 3 tbsp cooking oil
  • 3 cloves garlic, minced (or ½ tsp garlic powder)
  • Juice of 1 lemon
  • Salt & pepper to taste
  • Basil or parsley (dried or fresh, as a garnish – optional)
Directions
  1. Boil the pasta according to package directions, then drain and set aside.
  2. Add 1 tbsp of the cooking oil to a skillet, and warm over medium-low heat. Add the shrimp and cook for 2-3 minutes per side, until opaque.
  3. Remove the shrimp from the skillet and set aside. In the same skillet, add the other 2 tbsp of cooking oil, and sauté the zucchini, cherry tomatoes, and garlic/garlic powder for 4-5 minutes, until softened and lightly caramelized.
  4. Add the drained pasta, shrimp, and lemon juice to the skillet, and toss together.
  5. Adjust seasonings as needed, garnish, and enjoy!
