Oven Baked Chicken & Veggies
Ingredients
- 1-2 lbs assorted chicken pieces (wings, thighs, drumsticks, etc.)
- 3-4 potatoes, cut into chunks
- 3 carrots, sliced
- 1 onion, quartered
- 3 tbsp cooking oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried thyme or Italian seasoning
- Salt & pepper
Directions
- Preheat the oven to 400 degrees F.
- Toss the veggies with half the oil and seasonings and spread on a baking sheet.
- Rub the chicken with the remaining oil and seasonings and arrange on top.
- Roast for 40-50 minutes until the chicken reaches an internal temp of 165 degrees F and the skin is crispy.
