Homemade Beef Stew
Ingredients
- 2 lbs chuck or round roast, cut into 1–2-inch cubes
- 4 carrots, chopped
- 3 potatoes, cubed
- 1 onion, diced
- 3 cups of beef broth
- 2 tbsp tomato paste
- 2 tsp thyme or rosemary
- 2 tbsp flour
- Salt & pepper
Directions
- Toss beef cubes with a little flour, salt, and pepper.
- Brown in oil until crust forms, then remove.
- Sauté the onion, then add the tomato paste and herbs.
- Return the beef, add broth and veggies, and simmer for 1.5-2 hours on the stove (covered). You can also cook for 6-8 hours on low in a slow cooker/crockpot.
