Homemade Beef Stew

Ingredients
  • 2 lbs chuck or round roast, cut into 1–2-inch cubes
  • 4 carrots, chopped
  • 3 potatoes, cubed
  • 1 onion, diced
  • 3 cups of beef broth
  • 2 tbsp tomato paste
  • 2 tsp thyme or rosemary
  • 2 tbsp flour
  • Salt & pepper
Directions
  1. Toss beef cubes with a little flour, salt, and pepper.
  2. Brown in oil until crust forms, then remove.
  3. Sauté the onion, then add the tomato paste and herbs.
  4. Return the beef, add broth and veggies, and simmer for 1.5-2 hours on the stove (covered). You can also cook for 6-8 hours on low in a slow cooker/crockpot.
