Hearty Three-Bean Chili
Ingredients
- 1 can of black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 can diced tomatoes with juice
- 1 cup of vegetable broth, tomato juice, or water
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced (or ½ tsp garlic powder)
- 2 tsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- Salt and pepper to taste
Directions
- In a large pot, sauté the onion, pepper, and garlic until soft.
- Add the beans, tomatoes, liquid (like broth or tomato juice) and seasonings. Stir well.
- Simmer for 20-25 minutes, stirring occasionally.
