“Healthier” Potato Salad

Ingredients

  • 3 hard boiled eggs
  • 1.5 lbs potatoes
  • ¾ cup plain greek yogurt
  • 3 Tbsp olive oil
  • 2 garlic cloves mined or 1 tsp garlic powder
  • 1 Tbsp Dijon mustard
  • 2 tbsp white vinegar
  • 1 tsp salt
  • ¼ tsp black pepper
  • 3 green onions chopped
  • 2 celery chopped

Directions

  1. Peel and dice hard boiled eggs.
  2. Place potatoes in a pot with water covering the potatoes. Bring the water to a boil. Cook until potatoes are just tender when pierced with a fork. Do not over cook.
  3. In a bowl, either mix or blend the yogurt, oil, vinegar, mustard, garlic, celery, salt and pepper. Add the green onions in.
  4. Drain the potatoes. When cool enough to handle, cut the potatoes into 1.5 inch chunks and transfer to a large bowl.
  5. Pour the dressing over the potatoes and stir. Let sit for 10 minutes.
  6. Add the celery and eggs and combine.
