“Healthier” Potato Salad
Ingredients
- 3 hard boiled eggs
- 1.5 lbs potatoes
- ¾ cup plain greek yogurt
- 3 Tbsp olive oil
- 2 garlic cloves mined or 1 tsp garlic powder
- 1 Tbsp Dijon mustard
- 2 tbsp white vinegar
- 1 tsp salt
- ¼ tsp black pepper
- 3 green onions chopped
- 2 celery chopped
Directions
- Peel and dice hard boiled eggs.
- Place potatoes in a pot with water covering the potatoes. Bring the water to a boil. Cook until potatoes are just tender when pierced with a fork. Do not over cook.
- In a bowl, either mix or blend the yogurt, oil, vinegar, mustard, garlic, celery, salt and pepper. Add the green onions in.
- Drain the potatoes. When cool enough to handle, cut the potatoes into 1.5 inch chunks and transfer to a large bowl.
- Pour the dressing over the potatoes and stir. Let sit for 10 minutes.
- Add the celery and eggs and combine.
