Easy Fish Tacos
Ingredients
- 1 lb fish fillets of your choice
- 1 tbsp olive oil
- 8 small corn or flour tortillas
- 2 cups of shredded cabbage or lettuce
- ½ cup salsa or Pico de Gallo
- ½ cup diced avocado or guacamole
- Salt & pepper
- Seasonings (Try chili powder, cumin, paprika, and garlic powder)
- Lime wedges for serving
Directions
- Pat the fish dry with paper towels. In a small bowl, mix the chili powder, cumin, paprika, garlic powder, salt, and pepper. Rub seasoning evenly over the fish.
- Heat the olive oil in a large skillet over medium heat. Cook fish for 3-4 minutes per side, until flat and opaque.
- Remove fish from the skillet and gently flake into bite-sized pieces with a fork.
- Heat the tortillas in a dry skillet or wrap them in foil and warm in the oven for a few minutes.
- Add the fish to the tortillas, then top with cabbage, salsa, avocado, and lime juice.
