Crispy Chickpea and Kale Salad
Ingredients
- 1 bundle of kale chopped
- 1 can chickpeas (drained and rinsed)
- Salt
- 1 ½ Tbsp olive oil
Dressing
- 3 garlic cloves or 1 Tbsp garlic powder
- 2 Tbsp olive oil
- ¼ cup lemon juice
- 1 Tbsp honey or maple syrup
Directions
- Toss drained chick peas with oil and salt. Add to a baking sheet and bake at 375°F for 15-20 minutes. Flip, then bake for another 10-15 minutes.
- Mince the garlic and add all of the dressing ingredients to a bowl and mix well.
- Add kale to a salad bowl and drizzle with oil and lemon juice. Massage the kale with your hands. Add the dressing and top with the chickpeas.
