Crispy Chickpea and Kale Salad

Ingredients

  • 1 bundle of kale chopped
  • 1 can chickpeas (drained and rinsed)
  • Salt
  • 1 ½ Tbsp olive oil

Dressing

  • 3 garlic cloves or 1 Tbsp garlic powder
  • 2 Tbsp olive oil
  • ¼ cup lemon juice
  • 1 Tbsp honey or maple syrup

Directions

  1. Toss drained chick peas with oil and salt. Add to a baking sheet and bake at 375°F for 15-20 minutes. Flip, then bake for another 10-15 minutes.
  2. Mince the garlic and add all of the dressing ingredients to a bowl and mix well.
  3. Add kale to a salad bowl and drizzle with oil and lemon juice. Massage the kale with your hands. Add the dressing and top with the chickpeas.
