Creamy Mashed Cauliflower

Ingredients

  • 2 lbs cauliflower florets
  • 2 whole garlic cloves peeled
  • 2 Tbsp butter
  • ¼ cup parmesan cheese
  • Optional: ¼ cup sour cream
  • Salt and pepper to taste

Directions

  1. Cut the florets in half so they are all the same size.
  2. Add cauliflower and garlic to a large pot of boiling water for 10 minutes until soft.
  3. Scoop out a cup of cooking water for later.
  4. Drain the cauliflower and garlic.
  5. Mince the garlic and mash the cauliflower with a masher or fork. A blender can be used if available.
  6. Add the remaining ingredients. Add the water only if the consistency needs to be adjusted.
