Creamy Mashed Cauliflower
Ingredients
- 2 lbs cauliflower florets
- 2 whole garlic cloves peeled
- 2 Tbsp butter
- ¼ cup parmesan cheese
- Optional: ¼ cup sour cream
- Salt and pepper to taste
Directions
- Cut the florets in half so they are all the same size.
- Add cauliflower and garlic to a large pot of boiling water for 10 minutes until soft.
- Scoop out a cup of cooking water for later.
- Drain the cauliflower and garlic.
- Mince the garlic and mash the cauliflower with a masher or fork. A blender can be used if available.
- Add the remaining ingredients. Add the water only if the consistency needs to be adjusted.
