Cottage Cheese Egg Bake
Ingredients
- 8 eggs
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp black pepper
- ¾ cup cottage cheese
- ½ cup shredded parmesan cheese
- 3 cups roughly chopped spinach
- ½ cup diced yellow or green onions
Directions
- Preheat the oven to 375°F. Mist a baking dish with nonstick cooking spray.
- In a medium bowl, combine the eggs, garlic powder, salt, and pepper. Whisk until well combined. Stir in the cottage cheese, Parmesan cheese, spinach, and onion.
- Pour the egg mixture into the prepared dish.
- Bake until the center is set, 30-35 minutes.
- Store leftovers, covered, in the refrigerator for up to 3 days. Reheat servings in a skillet or microwave.
