Classic French Raspberry Clafoutis

Ingredients

  • 3 Tbsp melted butter
  • ½ cup all purpose flour
  • ¼ cup plus 2 Tbsp sugar
  • Salt
  • 3 eggs
  • Lemon zest of 1 lemon
  • ¼ cup plus 2 Tbsp milk
  • 3 cups raspberries

Directions

  1. Preheat oven to 350°F. Butter a glass baking dish
  2. In a bowl, whisk the flour, sugar, and pinch of salt. Then whisk in the eggs, melted butter, and lemon zest until smooth. Add the milk and mix for 3 minutes.
  3. Pour the batter into the greased dish and top with the raspberries.
  4. Bake for 30 minutes until it is set and golden.
  5. Optional: dust with powdered sugar to serve.
