Black Bean Breakfast Scramble

Ingredients
  • 1 can of black beans, drained and rinsed
  • 1 small onion, diced
  • 1 bell pepper, diced
  • ½ tsp chili powder
  • 2-3 large eggs, or ½ block firm tofu, crumbled
  • 1 tbsp cooking oil
  • Salt & pepper to taste
Directions
  1. Heat the cooking oil in a skillet. Add the onion and bell pepper and cook until softened (about 5 minutes).
  2. Stir in the black beans, chili powder, salt, and pepper. Cook for 2-3 minutes.
  3. If you use eggs: push the beans/veggies to one side of the pan. Crack eggs into the other side, scramble until just set, then mix everything together.
  4. If you use tofu: crumble the tofu directly into the pan. Cook for 5-7 minutes, stirring, until heated through and slightly golden.
  5. Serve as-is, wrapped in tortillas, or topped with salsa and avocado.
